  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and a pinch of salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, eggs, vanilla extract, and melted butter until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Cover and chill the dough in the refrigerator for about an hour.
  6. Roll tablespoon-sized portions of dough into balls and coat them in powdered sugar before placing them on prepared baking sheets about two inches apart.
  7. Bake for 12-15 minutes or until crinkled on top. Cool on wire racks before serving.
