  • 1 cup sweetened dried cranberries

  3. In a separate bowl, whisk together flour and baking soda, then gradually add to the butter mixture until just combined.
  4. Fold in chopped pistachios and dried cranberries.
  5. Divide the dough into two logs and wrap in parchment paper; refrigerate for at least 2 hours.
  6. Preheat oven to 350°F (175°C). Slice logs into half-inch thick rounds and place on parchment-lined baking sheets.
  7. Bake for 10-12 minutes or until edges are golden.
