  • 2 tsp baking powder

  • ½ cup unsalted butter, softened

  • ½ cup pineapple juice (preferably fresh)
  • 1 cup canned crushed pineapple, drained
  • 1 cup heavy cream
  • ½ cup powdered sugar

  3. In another bowl, cream butter and granulated sugar until fluffy. Add eggs one at a time, then mix in pineapple juice and crushed pineapple.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  5. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Once cooled, whip heavy cream with powdered sugar until stiff peaks form and frost the cupcakes.
