  • 3/4 cup brown sugar, packed

  • Green food coloring (a few drops)
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour and baking soda.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the egg and peppermint extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined. If desired, fold in chocolate chips.
  6. Divide the dough in half. Color one half with green food coloring and gently swirl both portions together on the baking sheet using a knife or toothpick.
  7. Bake for 10-12 minutes or until edges are lightly golden.
