Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 tsp peppermint extract
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together cocoa powder, flour, baking soda, and salt. Gradually incorporate this mixture into the wet ingredients until fully combined.
  4. Fold in chocolate chips and peppermint extract.
  5. Using a tablespoon or cookie scoop, drop rounded balls of dough onto prepared baking sheets about two inches apart. Top each cookie with crushed candy canes.
  6. Bake for about 10 minutes or until edges are set but centers are slightly underbaked for softness. Cool on sheets for a few minutes before transferring to wire racks.
