  • 1 cup passionfruit puree (fresh or canned)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans lined with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
  3. Cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition; then stir in vanilla extract.
  4. Gradually mix in half the dry ingredients followed by the milk. Fold in passionfruit puree until smooth.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
