  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together rolled oats, flour, baking soda, and salt. Gradually mix into the wet ingredients.
  5. Fold in butterscotch chips until evenly distributed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown but centers remain soft.
  8. Allow cooling slightly before transferring to plates.
