Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tbsp granulated sugar

Instructions

  1. Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press into the bottom of a springform pan to form an even layer.
  2. Make the filling: Beat softened cream cheese in a separate bowl until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  3. Layer: Spread half of the cream cheese filling over the crust, followed by half of the mixed berries. Repeat with another layer of filling and berries.
  4. Chill: Cover with plastic wrap or foil and refrigerate for at least four hours or overnight until set.
  5. Serve: Toss remaining berries with granulated sugar and let sit for ten minutes to release juices. Top your cheesecake with these berries before slicing.
