  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ cup ginger beer
  • 2 tbsp lime juice
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • For Frosting: 8 oz cream cheese (softened)
  • 3 cups powdered sugar
  • Zest of 1 lime
  • 1 tbsp vodka (optional)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Line muffin tins with cupcake liners.
  2. 2. In a bowl, whisk together flour, sugar, and baking powder.
  3. 3. In another bowl, mix melted butter, eggs, ginger beer, lime juice, and zest until well combined.
  4. 4. Gradually fold the wet ingredients into the dry mixture until just combined.
  5. 5. Fill muffin tins two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean. Cool completely.
  6. 6. For the frosting, beat cream cheese until smooth; gradually add powdered sugar and lime zest. Mix in vodka if desired and frost cooled cupcakes.
