  • ½ cup powdered sugar
  • 3 gelatin sheets
  • ½ cup water
  • 1 cup corn syrup
  • 1 cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  3. In another bowl, beat the butter until creamy. Gradually add sugar until fluffy.
  4. Mix in eggs one at a time, then add milk and vanilla; blend until smooth.
  5. Gently fold dry ingredients into the wet mixture until just combined.
  6. Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  7. For Mallow Cream: Whip heavy cream and powdered sugar until stiff peaks form.
  8. Assemble the cake by layering mallow cream between cooled cake layers and cover with remaining cream before pouring on the mirror glaze.
