  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup pure maple syrup
  • ½ cup brewed coffee (cooled)
  • 1 cup chopped pecans (toasted)
  • 2 cups powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the butter until smooth. Gradually add sugar and beat until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in maple syrup and coffee.
  5. Combine wet and dry ingredients gently, then fold in chopped pecans.
  6. Pour batter into liners, filling them two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool completely before frosting with maple-flavored icing and sprinkling with additional pecans.
