  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ¾ cup pure maple syrup
  • ½ cup whole milk
  • ½ cup crispy bacon (crumbled)
  • For the Frosting: 2 cups powdered sugar
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
  3. In another bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by maple syrup until well combined.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Fold in half of the crumbled bacon gently into the batter.
  7. Fill cupcake liners about two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  8. For frosting, beat together powdered sugar, softened butter, and vanilla extract until smooth.
  9. Pipe frosting onto cooled cupcakes and top with reserved bacon bits.
