  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 3/4 cup fruit jam (raspberry or apricot)
  • Powdered sugar for dusting (optional)

Instructions

  1. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract; mix until combined.
  2. Gradually sift in the flour while mixing until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for at least one hour.
  4. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut out shapes using cookie cutters, ensuring half have holes for the tops.
  5. Place cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes until lightly golden.
  6. Once cooled, spread jam on half of the cookies and top with the cut-out cookies. Dust with powdered sugar if desired.
