  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1/3 cup milk
  • 1/3 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 tbsp poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, salt, and poppy seeds.
  3. In another bowl, cream softened butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  5. Gradually add dry ingredients to the wet mixture while alternating with milk. Mix until just combined.
  6. Spoon batter into cupcake liners (fill two-thirds full) and bake for 18–20 minutes or until a toothpick comes out clean. Cool before frosting.
