  • Zest and juice of 2 fresh lemons (about 1/4 cup juice)
  • 1/2 cup granulated sugar (for lemon curd)
  • 1/4 cup unsalted butter (for lemon curd)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Whisk together flour, baking powder, and sugar in a bowl.
  3. In another bowl, beat together softened butter and eggs until creamy. Add lemon zest and juice.
  4. Combine wet ingredients with dry mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until golden brown.
  6. Prepare lemon curd by cooking sugar, egg yolks, lemon juice, and butter over medium heat until thickened.
  7. Whip egg whites until stiff peaks form; gradually add sugar until glossy peaks form.
  8. Once cooled, fill cupcakes with lemon curd and top with meringue.
