  • 1 tsp vanilla extract
  • Sugar for topping

  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy (about 3 minutes).
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  6. Gently fold in lemon curd until evenly distributed.
  7. Scoop tablespoons of dough onto prepared sheets. Bake for 12-15 minutes until edges are golden but centers remain soft.
  8. Cool slightly before sprinkling with sugar and using a kitchen torch to create a caramelized crust.
