  • 1/2 cup granulated sugar (for crust)
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine melted butter, 1/2 cup flour, and 1/2 cup granulated sugar until crumbly. Press this mixture evenly into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. While the crust bakes, whisk together eggs, remaining granulated sugar, lemon juice, zest, and the remaining flour until smooth.
  5. Pour the lemon mixture over the baked crust.
  6. Bake for an additional 20-25 minutes until set. Cool completely before slicing into squares and dusting with powdered sugar.
