Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. In another bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix in key lime juice, zest, and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
  6. Fill cupcake liners two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean.
