  • ¾ cup vegetable oil
  • 3 large eggs
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup canned crushed pineapple (drained)
  • 1 cup chopped pecans
  • 8 oz cream cheese (softened)
  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix vegetable oil, eggs, mashed bananas, and crushed pineapple until smooth.
  4. Combine wet ingredients with dry ingredients; stir gently until just mixed. Fold in chopped pecans.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cakes cool completely before frosting with cream cheese frosting.
