Ingredients

  • 1 cup gingerbread cookies (crushed)
  • ½ cup espresso or strong coffee (freshly brewed)
  • ¼ cup granulated sugar
  • 2 tsp gelatin powder

Instructions

  1. In a small bowl, sprinkle gelatin over 2 tbsp cold water and let bloom for 5 minutes.
  2. Whip the chilled heavy cream in a large mixing bowl until soft peaks form.
  3. In another bowl, combine crushed gingerbread cookies, sugar, and brewed espresso until well mixed.
  4. Gently heat bloomed gelatin in the microwave for about 10 seconds until dissolved, then stir into the cookie mixture.
  5. Fold in whipped cream gently until fully combined.
  6. Spoon mixture into silicone dome molds and smooth tops with a spatula.
  7. Chill in the refrigerator for at least 4 hours or overnight until set.
