  • ¾ cup whole milk
  • ½ cup brewed coffee (cooled)
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, mix eggs, milk, brewed coffee, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to a wire rack.
