  • 3 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • 1 cup brewed strong coffee (cooled)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, baking powder, ginger, cinnamon, nutmeg, and brown sugar.
  3. In another bowl, cream softened butter until fluffy. Add eggs one at a time, then mix in cooled coffee and vanilla.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before frosting with cream cheese frosting or whipped cream.
