  • ½ cup milk (or almond/oat milk)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, ground ginger, and cinnamon until well combined.
  3. In another bowl, mix molasses, eggs, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined; lumps are fine.
  5. Fill the cupcake liners two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
