Genoise cake is a classic Italian sponge cake known for its light, airy texture and delicate sweetness.   • 4 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour (unbleached)
  • 4 tbsp unsalted butter (melted and slightly cooled)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a mixing bowl, whisk together the eggs and sugar until pale and fluffy (about 5 minutes).
  3. Gently sift in the flour and carefully fold it in to maintain volume.
  4. Add the melted butter and vanilla extract, folding until fully combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
