  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, at room temperature
  • 3 large eggs
  • 1 cup eggnog
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 tbsp eggnog

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, baking powder, and nutmeg.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in eggnog and vanilla until smooth.
  4. Gradually add dry ingredients to wet mixture, mixing gently until just combined.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For frosting, beat cream cheese until smooth; gradually add powdered sugar and eggnog until desired consistency is achieved.
  7. Spread frosting between layers and on top of the cooled cake.
