  • 1/2 tsp baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, coffee grounds, and baking soda; set aside.
  3. In another bowl, beat softened butter with brown and granulated sugar until light and fluffy (about 2 minutes).
  4. Add the egg and vanilla extract; mix until combined.
  5. Gradually fold in the dry mixture until just combined. Gently stir in the chocolate chips.
  6. Scoop dough onto lined baking sheets (about 2 tablespoons each) leaving space in between.
  7. Bake for 10-12 minutes or until edges are golden brown but centers are soft. Cool on racks.
