  • 1 cup shredded coconut (sweetened or unsweetened)

  • 2 large eggs
  • ½ cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • Additional shredded coconut for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and sugar until well combined.
  3. In another bowl, beat the eggs and softened butter until creamy. Mix in coconut milk and rum.
  4. Combine the wet ingredients with the dry ingredients until just mixed, then gently fold in shredded coconut.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. For the frosting, beat cream cheese and powdered sugar until smooth. Spread over cooled cupcakes and top with additional coconut flakes.
