  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • ⅓ cup fresh lime juice
  • 1 tbsp lime zest
  • ½ cup coconut milk
  • 2 tbsp all-purpose flour
  • 1 tsp baking powder
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C) and line a springform pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
  3. Beat softened cream cheese until smooth; gradually add sugar, lime juice, zest, coconut milk, and flour until fully combined.
  4. Incorporate eggs one at a time on low speed until just mixed.
  5. Pour the filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least four hours.
  6. Remove from the pan, slice, and garnish with lime zest or toasted coconut if desired.
