  • 1 cup unsweetened shredded coconut
  • 1/2 cup ground almonds
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup jam of your choice (raspberry or apricot recommended)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract; mix until well combined.
  4. In another bowl, whisk together the flour, ground almonds, and shredded coconut. Gradually add this dry mixture to the wet ingredients until fully incorporated.
  5. Scoop tablespoon-sized portions of dough and roll into balls. Place them on the baking sheet two inches apart.
  6. Use your thumb to create an indentation in each ball, then fill each with about half a teaspoon of jam.
  7. Bake for 12-15 minutes or until lightly golden around the edges. Allow to cool on the baking sheet for five minutes before transferring to wire racks.
