  • 2 cups mixed dried fruits (raisins, sultanas, currants)
  • 1 cup unsalted butter (room temperature)
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 4 large eggs
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Soak mixed dried fruits in brandy or orange juice overnight.
  2. Preheat the oven to 300°F (150°C) and grease an 8-inch round cake tin.
  3. In a large bowl, cream together unsalted butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time along with citrus zest until well combined.
  5. In another bowl, sift together flour, baking powder, and spices; gradually fold into wet ingredients.
  6. Gently mix in soaked dried fruits until evenly distributed.
  7. Pour batter into prepared tin and bake for approximately 2 hours or until a skewer comes out clean. Let cool before decorating.
