Cinnamon Roll Cupcakes are the perfect blend of cozy cinnamon roll flavors and fluffy cupcake goodness.   • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tbsp milk (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and granulated sugar. In another bowl, beat softened butter and eggs until fluffy. Gradually mix in dry ingredients along with milk and vanilla until combined.
  3. In a small bowl, mix brown sugar and cinnamon for the swirl filling. Spread half of the batter into muffin tins, sprinkle with the brown sugar mixture, then dollop remaining batter on top. Swirl gently with a toothpick.
  4. Bake for about 18-20 minutes or until golden brown. Cool completely before frosting.
  5. For the frosting, beat softened cream cheese with powdered sugar until smooth. Spread or pipe onto cooled cupcakes.
