  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar mixed with 2 tbsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until combined.
  3. In another bowl, cream melted butter with granulated sugar and brown sugar using an electric mixer for about three minutes until fluffy. Add in the egg and vanilla; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. Using a tablespoon or cookie scoop, drop rounded dough onto prepared sheets, leaving space between them.
  6. Roll each ball in the cinnamon-sugar mixture before baking for about 10-12 minutes until golden brown.
