  • 1 cup granulated sugar
  • 1 tsp baking powder

  • 1/2 cup unsalted butter (softened)
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and granulated sugar until fluffy. Beat in the egg and vanilla extract.
  3. Gradually mix the dry ingredients into the wet mixture until just combined.
  4. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Take one tablespoon of cookie dough, flatten it in your palm, place half a teaspoon of cheesecake filling in the center, and fold the dough around it.
  6. Place on baking sheets two inches apart and bake for 12-15 minutes until lightly golden around the edges but soft in the center. Let cool before serving.
