  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line and grease a jelly roll pan with parchment paper.
  2. Sift together flour, cocoa powder, sugar, and baking powder in one bowl.
  3. In another bowl, whisk eggs, oil, vanilla extract, and peppermint extract until smooth.
  4. Gradually mix dry ingredients into wet ingredients without overmixing.
  5. Pour batter into the prepared pan and spread evenly. Bake for 12–15 minutes until a toothpick comes out clean.
  6. While cooling on a wire rack, whip heavy cream until soft peaks form. Add powdered sugar and peppermint extract; whisk until stiff peaks form.
  7. Turn the cooled cake onto a powdered sugar-dusted towel, spread filling evenly, and roll tightly using the towel as guidance.
  8. Wrap in plastic wrap and refrigerate for at least an hour before slicing.
