  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (softened)
  • 2 cups confectioners' sugar
  • 1/2 cup strawberry puree
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, combine eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Spoon the batter into the cupcake liners and bake for about 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by mixing butter and confectioners' sugar before adding strawberry puree. For the ganache, heat heavy cream until simmering and pour over chocolate chips; let sit before stirring until smooth.
  7. Frost cooled cupcakes with strawberry frosting and drizzle with chocolate ganache.
