  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt until well combined.
  3. In another bowl, mix vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before making the frosting by beating together cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla extract until smooth.
  7. Frost cooled cupcakes generously and serve.
