Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter (room temperature)
  • 1 large egg
  • ¼ cup unsweetened cocoa powder
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and gather all ingredients.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour and cocoa powder. Gradually mix this dry mixture into the wet ingredients until fully incorporated.
  5. Divide the dough into two equal parts; keep one plain (vanilla) and add cocoa powder to the other half (chocolate). Chill both doughs in plastic wrap for about an hour.
  6. Roll out each dough on a floured surface, cut into squares, and layer alternately to form the checkerboard pattern. Place on lined baking sheets.
  7. Bake for 10-12 minutes until just set but soft in the center. Allow to cool slightly before serving.
