  • 1 cup shredded coconut (toasted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.

  3. In another bowl, mix coconut milk and eggs until smooth. Gradually add this mixture to the dry ingredients while stirring gently.
  4. Fold in pineapple chunks and mango slices until evenly distributed.
  5. Divide the batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks. Once cooled, layer with shredded coconut between and on top.
