  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ginger powder
  • 1/2 tsp ground cardamom
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk (room temperature)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar, sifted
  • 4 oz cream cheese, softened
  • 2 tbsp brewed chai tea (cooled)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together flour, baking powder, sugar, cinnamon, ginger powder, and cardamom until well combined.
  3. In another bowl, cream the softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition; then stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk until just combined.
  5. Pour the batter into cupcake liners about two-thirds full and bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
  6. While cupcakes cool, beat together powdered sugar, cream cheese, and cooled chai tea until smooth. Frost cooled cupcakes generously.
