  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated carrots (about 2 medium carrots)
  • Optional: 1/2 cup chopped walnuts or pecans
  • For the Maple Cream Cheese Frosting: 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup maple syrup
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the vegetable oil, eggs, grated carrots, and optional nuts until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Fill cupcake liners evenly with batter and bake for 20–25 minutes or until a toothpick comes out clean.
  6. While cooling on a wire rack, beat the cream cheese and butter until smooth. Gradually add powdered sugar and maple syrup until desired consistency is reached.
  7. Once cooled, frost cupcakes generously with maple cream cheese frosting.
