  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots (about 3 medium carrots)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract until fully incorporated.
  5. Gradually mix in the dry ingredients until just combined. Fold in grated carrots and nuts gently.
  6. Drop spoonfuls of dough onto prepared sheets about two inches apart. Bake for 12-15 minutes or until edges are golden brown.
  7. Allow cooling on wire racks before serving.
