Ingredients

Scale
  • 1 cup unsalted butter (2 sticks)
  • 3 ripe bananas (mashed)
  • 1 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 1/2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium saucepan over medium heat, melt the unsalted butter until it turns golden brown and has a nutty aroma, about 5 minutes. Let it cool slightly.
  3. In a mixing bowl, mash the ripe bananas until smooth. Stir in brown sugar, granulated sugar, browned butter (after cooling), and vanilla extract until well combined.
  4. In another bowl, whisk together the oats, flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined—avoid overmixing!
  5. Fold in chocolate chips until evenly distributed throughout the dough.
  6. Drop heaping tablespoons of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges are lightly golden but centers remain soft. Allow to cool on plates before enjoying.
