  • 1 cup whole milk (for custard)
  • 1/4 cup granulated sugar (for custard)
  • 2 tbsp cornstarch (for custard)
  • 1 tsp vanilla extract (for custard)
  • 1/2 cup heavy cream (for ganache)
  • 1 cup chocolate chips or chopped chocolate (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla; mix well. Gradually add dry ingredients alternating with milk until combined.
  3. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
  4. For custard, whisk together milk, sugar, cornstarch, and vanilla in a saucepan over medium heat until thickened (about five minutes). Let cool.
  5. For ganache, heat heavy cream until simmering; pour over chocolate chips and stir until smooth.
  6. Once cupcakes are cooled, fill each with custard and drizzle chocolate ganache on top.
