  • 2 tbsp cornstarch
  • 3 tbsp granulated sugar
  • 1 tsp vanilla bean paste or extract
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Mix in egg and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until combined.
  4. Scoop tablespoon-sized dough onto prepared baking sheets and bake for about 10 minutes or until golden brown. Cool completely on wire racks.
  5. For the custard filling, combine milk, sugar, cornstarch, and vanilla in a saucepan over medium heat until thickened. Let cool.
  6. To make ganache, pour hot heavy cream over chocolate chips, let sit for five minutes, then stir until smooth.
  7. Assemble cookie bites by filling one cookie half with custard and topping with another half; drizzle with ganache.
