Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake tin with liners.

  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs, lime zest, and juice; mix well.
  4. Gradually add dry ingredients to wet mixture while gently folding in blueberries and mint leaves.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until golden brown. Cool completely before frosting with lime buttercream.
