  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 Earl Grey tea bags
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup fresh blackberries
  • 1 cup powdered sugar (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a saucepan, warm 1/2 cup of milk and steep the Earl Grey tea bags for about five minutes. Let it cool slightly.
  3. In a bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  5. Gradually mix in the dry ingredients alternating with the brewed Earl Grey milk. Gently fold in fresh blackberries.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool before icing with powdered sugar mixed with leftover milk if desired.
