  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter (melted)
  • 1 cup fresh or jarred sour cherries (drained)
  • 2 cups heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and dust with flour.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, combine eggs, melted butter, and milk. Gradually mix into dry ingredients until just blended.
  4. Divide batter between pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to a wire rack.
  5. Prepare cherries by draining if using jarred ones. Set aside some for garnish.
  6. Assemble the cake: place one layer on a serving plate, spread half of the whipped cream over it, top with half of the cherries, then repeat with the second layer.
