Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan or line an eight-inch square baking pan with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, beat eggs, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; fold in chopped apples carefully.
  5. Pour batter into the prepared pan and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool in the pan for about ten minutes before transferring to a wire rack. Serve warm or at room temperature.
