  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • ½ cup unsalted butter (softened)
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time while mixing.
  4. Gradually mix in dry ingredients along with milk and vanilla until just combined.
  5. Fold in diced apples coated in cinnamon sugar.
  6. Fill liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean. Allow cooling completely before frosting.
