  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups apples, peeled and chopped (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and granulated sugar. Set aside.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in eggs one at a time along with vanilla extract until well combined.
  5. Gradually blend dry ingredients into the wet mixture until just combined; do not overmix.
  6. Gently fold in chopped apples.
  7. Drop spoonfuls of dough onto prepared baking sheets about two inches apart.
  8. Bake for 12-15 minutes until edges are golden. Cool on wire racks before serving.
